Infuse 1 tablespoon of coarsely chopped fresh ginger into 8 oz of romeo's gin. Leave to macerate for 12 to 24 hours then filter to remove all the ginger pieces.
In a mixing glass, add all ingredients with ice and stir 20 to 30 revolutions to cool and dilute the cocktail.
Strain through a cocktail strainer into an Old Fashioned glass over a large ice cube.
Garnish with candied ginger or a thin slice of fresh ginger.
