Soul Lattice is a fruity and herbaceous cocktail, made with homemade apricot syrup.


  • 1 ½ oz of romeo’s gin
  • ¾ oz of home made garden apricot syrup (apricot, carrot, ginger, leek & lettuce)
  • ½ oz of lemon juice
  • 1 fresh egg white
  • Garnish: 3 sprays of hibiscus petal tincture, any edible garden flowers or vegetables, purple carrot florette, leek petals, gooseberries, spruce tip


  • Shaker
  • Cocktail strainer
  • Cocktail sieve
  • Coupe glass
  • Ice
  • Atomizer


  • Build all ingredients in a shaker and shake vigorously with ice.
  • Double strain, then dry shake (without ice), and pour into chilled coupe glass.
  • Garnish with comestible flowers and vegetables.
