  • 1 oz of romeo’s gin
  • ¼ oz of lemon juice
  • ¼ oz of rich simple syrup (2:1)
  • Yuzu lemonade foam
  • 3 oz of Lamarca Prosecco
  • Garnish: Beet caviar pearls and dill


  • Shaker
  • Cocktail strainer
  • Cocktail sieve
  • Bar spoon
  • Ice
  • Champagne flute


  • Add all ingredients in a shaker, except for Lamarca Prosecco
  • Shake vigorously. Double strain in a Champagne flute.
  • Top with 3 ounces of Lamarca Prosecco.
  • Add a bar spoon of yuzu lemonade foam on top of the drink.
  • Garnish with beet pearls and dill.
