I was inspired by Risk’s use of air and space next to the bright colours. I wanted to make a drink that leaned into the brighter notes of romeo’s gin, especially the almond and lemon notes. The cocktail is a riff on a classic 2:1 gin martini balanced out with rich almond syrup, a bright yuzu syrup. The bitters add a bit of spice to round out the fruit and floral flavours of the other ingredients.
