Mindarie is an original romeo’s gin cocktail with a gorgeous blue color created by Reese Southern. It is made with sake, sparkling wine syrup and an umami touch of nori.


  • 1 ½ oz of romeo’s gin
  • ½ oz of sake
  • ½ oz of sparkling wine syrup
  • 1 dash of acid solution
  • Garnish: Sea foam and nori waves


  • Mixing glass
  • Bar spoon
  • Cocktail strainer
  • Old Fashioned glass
  • Ice, Cauldron
  • Scissors
  • Tea spoon
  • Atomizer
  • Ice tray (2×2 inches)


  • Stir cocktail until desired dilution is achieved (10 seconds depending on ice).
  • Strain over a large blue ice cube in an Old Fashioned glass.
  • Garnish with sea foam spray and nori waves.

Sparkling wine syrup: 750 ml sparkling wine (Preferably a dry wine with a lot of minerality), White sugar
Over medium heat reduce the sparkling wine to a quarter of its original volume. Measure the weight of the reduced sparkling wine and add an equal weight of sugar. Stir until dissolved and refrigerate.

Sea Foam: 60 ml romeos gin, 1 tea spoon of salt, ⅛ tea spoon of malic acid, 2 long lemon peels
Combine all and allow to steep (4 hours or overnight). Remove peels and pour liquid into an atomizer.

Acid Solution: 1 tea spoon of citric acid, ¼ tea spoon of malic acid, 60 ml water
Stir until acid dissolves

Nori Waves: 1 large Nori Sheet, Small pair of scissors
Cut a 1 inch strip from the nori sheet. Cut a wave pattern into the strip.

Blue Ice: 600 ml of water, 150 ml of Blue Curacao, 2x2inch ice tray
Combine water and Blue Curacao. Pour into tray and freeze.
