Mellow Yellow

Mellow Yellow is a cocktail with romeo's gin and mustard created by Marika Bouchard from Dear Friend Bar in Halifax.

My inspiration was art. I wanted to not constrain the limits of my imagination and try something different and outside the box. To create something new and exciting from something we all know too well.



  • 1 ½ oz of romeo’s gin
  • ½ oz of lemon juice
  • ½ oz of yellow mustard syrup
  • ½ oz of aquafaba
  • ¼ oz of cucumber juice
  • ¼ oz of Prosyro passion fruit syrup

Yellow mustard syrup:

  • 4 parts of simple syrup
  • 1 part of yellow mustard


  • Coupe glass
  • Jigger
  • Shaker
  • Cocktail strainer
  • Cocktail sieve
  • Ice
  • Saucepan



  • Add all ingredients in a shaker.
  • Add ice and shake vigorously for 10 seconds.
  • Double strain the liquid into coupe glass using a sieve and a cocktail strainer.

Yellow mustard syrup:

  • In a small saucepan, combine sugar and water and heat until sugar is completely dissolved (do not bring to a boil).
  • Add yellow mustard and bottle.
